The coffee beans, called Black Ivory[象牙] and priced at $1,100 per kilogram, are digested by an elephant before you drink it. There are only 50 kilograms, or about 110 pounds, currently for sale.
According to the resort[度假村], Black Ivory coffee beans are "naturally refined[提炼]" by Thai elephants. Research indicates that during digestion, the enzymes[酶] of the elephant break down coffee protein[蛋白质], according to the resort. Protein is one of the factors responsible for bitterness[苦味] in coffee: less protein, less bitterness.
