Introduction

前言


The past occurrence of various food safety incidents has led to decreased public confidence in the safety of food and in the management of food-related hazards. 

 过往多次发生的各类食品安全事件导致消费者对食品的安全以及食品安全问题的管理信心下降。


Some food safety incidents have had international impact on consumer confidence in, and economic functioning of, the food chains affected (for example, BSE and dioxin contamination), while others have had only national impact (for example, honey contaminated by mold in Greece).

有些食品安全事件对消费者具有国际性的影响力,同时还在经济方面影响着食品生产链(例如:疯牛病和二恶英污染),但有些食品安全事件只在国内具有影响(例如:希腊的污染蜂蜜事件)。


As such, these food safety crises dramatically illustrate the need of various actors in the food chain to understand why and how consumers react the way they do.

以上这些食品安全事件极佳的阐释了食品产业需了解消费者为什么和如何对事件做出反应。


This lecture examines how apparently inconsistent or irrational behaviour of consumers can be explained by their attitudes and perceptions of risk and risk management practices.

这堂课阐述了消费者对于危险以及危险管理的态度能够导致他们那些明显矛盾和不合理的行为。


We will also consider how to carefully plan for potential crises (pre-crisis preparation) and respond when a crisis happens (post-crisis response).

我们也将涉及如何仔细为未发生的潜在危机做准备以及如何在危机发生后做出回应。


 Attention will furthermore be paid to the role of (new) media and consumer differences in responses to food safety incidents and measures.

同时,会继续集中讨论媒体在食品安全事件中扮演的角色以及消费者对于食安事件以及措施的不同反应。
