Introduction 简介

A cream tea (also known as a Devonshire tea, Devon cream tea or Cornish cream tea) is a form of afternoon tea light meal, consisting of tea taken with a combination of scones , clotted cream, and jam .

奶油茶(也被称为Devonshire tea, Devon cream tea 或 Cornish cream tea)是下午茶便餐的一种形式,由红茶、司康饼、固体奶油和果酱组成。

History 历史

The name "Devonshire tea" comes from the county of Devon in England. The exact origin of "cream tea" is disputed, although there is evidence to suggest that the tradition of eating bread with cream and jam already existed at Tavistock Abbey in Devon in the 11th century.

Variations 演变

There are regional variations as to how a cream tea should preferably be eaten. The Devonshire (or Devon) method is to split the scone in two, cover each half with clotted cream, and then add strawberry jam on top. Traditionally it is important that the scones be warm (ideally, freshly baked), and that clotted (rather than whipped) cream and strawberry jam, rather than any other variety, are used. Butter is generally not included, and the tea should be served with milk.

In Cornwall, the cream tea was traditionally served with a "Cornish split", a type of slightly sweet white bread roll, rather than a scone.  Splits are still used by many Cornish families in their own homes. The warm roll (or scone) is first buttered, then spread with strawberry jam, and finally topped with a spoonful of clotted cream. Scones are rarely buttered in commercially available teas.

在康沃尔,奶油茶通常与“Cornish split”一起送上,“Cornish split”是一种白色的甜面包卷,而不是司康饼。许多康奈尔家庭中仍在吃这种甜面包卷,首先在温暖的面包卷(或司康饼)上涂上黄油,然后抹上草莓酱,最终在上方放上一整勺固体奶油。店面上卖的奶油茶基本上都不涂黄油。

 

Where clotted cream is not available, whipped cream is sometimes used as asubstitute. Another variation to a cream tea is called "Thunder and Lightning" which consists of a round of bread, topped with clotted cream and golden syrup, honey or treacle.

如果没有固体奶油,稠奶油有时会作为替代品。另一种奶油茶叫做“闪电”,是圆形的面包顶放上固体奶油和糖浆,蜂蜜或者糖蜜。
