【正文学习】

The Renaissance was a period in history where new ideas, creative expressions, inventions and discoveries unleashed a new era of enlightened, rational thinking. It occurred after the period known as the Dark (or Medieval) Ages and lasted from approximately the 14th Century until the 17th Century. The invention of the printing press(印刷机), the Protestant reformation(宗教改革) and new scientific breakthroughs were at the forefront of an explosion of creativity and ideas. The power of the Church was challenged and in Europe a shift away from a feudalistic economic(封建经济) and societal model(社会模式) was begun.

Open Fires(明火)
In Renaissance times, almost all cooking was done directly over open flames, requiring a lot of dexterity and skill from the cook. Most homes had an open fire in a hearth(灶台) in the main living area. Separate kitchen areas did not emerge until later in the period. When separate kitchen areas were developed, a major innovation was setting the cooking fires into the walls. Many utensils(用具;器皿) and cooking implements were needed for any form of sophisticated cooking over an open fire, so peasants fare tended to be quite simple.

Stews(炖菜)
The most common form of cooking for the ordinary person in the Renaissance period was the making of stews. Stewings did not require large, expensive pots and pans, and were the most efficient way of cooking with expensive or scarce fuels, such as firewood. Stews also ensured little waste of food and precious cooking oils. Pottage was another staple of the peasants -- a type of stew made with oatmeal and this was also easily cooked in a single pot over an open fire.

Ovens(炉)
Ovens were expensive and therefore, out of the reach of the common person, however sometimes villages had a common oven that was shared for the purpose of bread-making. Bread was an extremely important source of food during this period as it was relatively cheap and filling. Some larger households and bakeries had their own ovens and some form of portable ovens existed that were designed to be buried in hot coals.


Spits(烤肉叉)
Another common form of cooking during the Renaissance Period was the use of the spit. This was a basic and effective form of cooking whereby and animal would be skewered(串住) and slowly roasted over an open fire. This had the advantage of being able to cook fairly large animals quite effectively. Most peasants however had to make do with the smaller animals as the larger animals, such as deer were reserved for the lords and nobles. Harsh penalties applied to anyone caught poaching(猎取,盗取).
